St. Patrick’s Day dinner has always been the traditional Corned Beef, Cabbage and a lovely bread made with buttermilk, eggs, caraway and raisins.
In Ireland soda bread is not reserved only to the holidays, but a daily staple in most homes.
Since Irish soda bread does not use yeast, there is no kneading or long rising time necessary. Baking soda and baking powder are used as the leavening agents, creating a moist bread without the fuss.
For folks who do not like raisins, we will make two kinds of soda bread; one with raisins and caraway seeds and another known as brown bread, without the raisins, and substituting whole wheat flour.
